Oh. My. Goodness. Week 2 of the Keto Diet was hard on me! I was craving pizza, pasta, and sweets. Thankfully I discovered a Keto Friendly Pizza Casserole and it was delicious! I changed a few ingredients to make the casserole healthier, but even if you leave out the extra vegetables I think you will enjoy this.
You will need:
1 lb Ground Italian Sausage
1 14.5 oz Can of Diced Tomatoes
1 bag of shredded Mozzarella Cheese
12oz of Raw Mushrooms
Prepackaged Pepperoni
1 Medium to Large Green Bell Pepper
1 Small Yellow Onion
1 Can of Black Olives
Instructions:
Brown the Ground Italian Sausage on the stove top until cooked through. While the sausage is browning, go ahead and drain your diced tomatoes in a colander.
Grease your 8x8 Glass Casserole Dish and make a layer of the cooked ground Italian sausage and the drained diced tomatoes. Sprinkle with basil, oregano, salt, and pepper.
Preheat the oven to 400 degrees F. Cut your onion, bell peppers, and mushrooms. Sautee everything in olive oil, basil, and oregano until cooked through. Mushrooms with be brown and dehydrated and the onions will be translucent. Layer the vegetables over the diced tomatoes. Cover completely with mozzarella cheese and then layer pepperoni on top of that.
Cook for 25-27 minutes. Let cool and then serve!
