Keto Week 2: Second Impressions and Meal Plan

Week 2:


Day 7:

I did not do Intermittent Fasting today because I am still sick. Here are all the meals I ate:

Breakfast: Boiled egg and 4 pieces of bacon (I was in a hurry)

Snack: Cheese stick

Lunch: Broccoli and cheddar soup (Recipe here)

Dinner: Beef Tacos on a low car tortilla with guacamole and sour cream

I passed up a bagel, hot fudge sundae, and cinnamon twists

I can tell that Intermittent Fasting (IF) has helped me detect true hunger. I am eating less frequently simply because I am listening to my body


Day 8:

I didn’t do IF today because I am still sick. I didn’t have much of an appetite. I am going to make an effort to eat more vegetables to help my immune system. My meals were:

Breakfast: 2 mini egg muffins (recipe here) and a scoop of guacamole

Lunch: Chick-fila Cobb Salad with Grilled Chicken, no tomatoes, and avocado ranch dressing

Dinner: Mongolian Beef and Egg Plant and 3 glasses of wine


Day 9:

I am feeling on the mend! As the day goes by I feel better and better. I think tomorrow I am going to start working out again and doing IF. I have to say that even though I wasn’t drunk, those three glasses of wine last night left me feeling groggy and tired this morning! I can’t believe how much better I feel when I don’t drink any alcohol at all. My meals for the day were:

I had the same breakfast as yesterday

Lunch: Chicken Salad Chick Chicken Salad with bacon, two tomato slices, one pickle slice, and one lettuce wedge. I also had a broccoli salad with bacon and mayonnaise

Dinner: Keto Pizza (recipe coming soon)


Day 10:

I am feeling 1,000 percent better today! Since it is Thursday and I am feeling better I am Intermittent Fasting (IF). Today I am trying to move my eating window from 11-7 to 12-8 so I can work out today. Since I have been doing the Keto Diet, fasting has been easier. Today I had a cup of tea at 7:30am. At 8:30 am I had my ACV elixir, and then at 10:00 I had another cup of decaffeinated tea. I brought 3 tea packets today since I am extending my fasting window so we will see how that goes!

Meal 1: I broke my fast at 12pm by eating three mini egg muffins (recipe here) and a scoop of guacamole. I usually only eat 2 mini muffins but I thought since I was working out today I might need to eat one more. I never needed that third cup of tea

Meal 2: I ate my keto Pizza for my second meal. I wasn’t starving but I definitely needed a pick me up to get through the next four hours of work

Meal 3: Zucchini, meat balls, and mushroom marinara sauce

Day 11: I was substitute teaching so I moved my fasting window to be very early

Meal 1: Three mini egg muffins and guacamole

Meal 2: Greek Salad Meal 3: Taco Salad (This did have corn but it was very minimal so I ate it)


Day 12:

I intermittent fasted from 11:30-7:30. I am really enjoying IF and I think it has helped me to understand hunger vs. cravings. I will do a post specifically on IF in February. Tip: remember liquid calories count so you shouldn’t be consuming anything other than coffee, tea, or water outside of your eating window

Meal 1: Two mini egg muffins with guacamole

Meal 2: Zucchini, meat balls, and mushroom marinara sauce

Meal 3: Leftover taco salad


Day 13:

I broke my fast at 12pm

Meal 1: Two mini egg muffins with guacamole

Meal 2: Zucchini, meat balls, and mushroom marinara sauce

Meal 3: Corn beef and cabbage with wine
