Healthy Banana Coconut Oatmeal Cookies

In 2015 I made a conscious decision to limit my sugar intake. Sugar has no nutritional value and people who eat too much sugar over a long period of time have a higher risk of developing nonalcoholic fatty liver disease because sugar is processed through the liver, and they have a higher chance of developing insulin resistance. Sugar is very addictive, and I would have intense sugar cravings daily. I knew that was something I wanted to overcome. With that being said, sometimes you need to satisfy that sweet tooth craving and that is where ripe fruits come in!


To make these cookies you will need:

2 Organic ripe bananas

1 Cup rolled oats

3 tablespoons of coconut flakes


Preheat your over to 350 degrees. If you have a food processor, pulse the bananas and rolled oats together to get a batter like consistency. I just mashed the bananas with a fork and mixed the rolled oats and coconut flakes together in a mixing bowl and I was satisfied with the consistency. Roll the mixture in your hands to create the ideal cookie size (about 1-2") and place on a lined baking sheet. Bake for 15 minutes and you are done!


The coconut flakes provide you with healthy fat that nourishes your brain, just make sure sugar isn't added to the flakes. These can sit out on your counter but it doesn't hurt to refrigerate them either. If you wanted to turn this into a breakfast pastry, simply add flax seed or chia seeds to give this protein and eat 2-3 for breakfast. Let me know in the comments below how you liked it!
