Healthy Peanut Butter Cookies

I absolutely love these cookies! They are gluten free, sugar free, and Keto Friendly. They are so simple and only require 3 ingredients, all of which are kitchen staples!


You will need:

1 Cage Free Egg

1 Cup of Natural Peanut Butter

1/2 Cup Stevia*


Instructions:

Preheat your oven to 350 Degrees F

Line a cookie sheet with parchment paper

Mix ingredients using a handheld mixer in a small mixing bowl

Roll mixture into balls no larger than 1" in diameter

Press flat with a fork to make a criss-cross pattern

Bake for 12 minutes

Let cool for 10 Minutes

Eat up!


**the recipe calls for 1/2 cup of stevia but I would actually reduce this to 1/4 Cup. Stevia has twice the flavor as traditional sugar and I feel like 1/2 C overwhelmed the cookie and prevented the peanut butter flavor from really shining.
