
This meal is vegetarian and can be vegan if you use vegan yogurt. I love making tortilla roll ups, especially when I am running low on groceries. Tortillas are a pantry staple that last a long time after purchasing and you can put almost anything inside them and come out with a delicious meal! A great way to cut down on food waste is to examine your refrigerator contents right before it is time to go grocery shopping again. I only have to go to the store every two weeks because I plan my meals and cook them, refrigerate, or freeze them right away. Making creative recipes like this with what I have left in my pantry and refrigerator is another reason I can go so long between grocery trips, and it helps me to save money. I used a spicy tortilla to provide a kick of flavor but you can use any type that you like.
You will need
10” tortillas (flour, corn, flavored, low carb- it doesn’t matter)
1 cup of no sugar added Greek yogurt
1 can of organic black beans, rinsed
1-2 avocado
You can make as much or as little as you want
Instructions:
Dice avocado and sprinkle with lime juice, salt, and pepper
Rinse your can of organic black beans to remove all the preservatives
Place 2-3 tablespoons of Greek Yogurt on each tortilla
Spoon in black beans and avocado
Roll tightly and refrigerate for a minimum of 2 hours to harden
Cut tortilla into 3 even pieces
Eat 3-4 Rolls for a balanced meal
