
What is everyone eating for breakfast? I like eating a piece of whole wheat toast or whole wheat bagel thins with almond butter, blueberries, and flax seed! Flax seed is a great source of omega-3 fatty acids and fiber. Plus it’s usually less expensive than chia seeds! Eating complex carbohydrates like whole wheat bread will keep you full longer and they don’t make your insulin levels spike like enriched (white) bread. Seeds are an excellent way to add protein and other nutrients to your diet. They can be calorically dense so I recommend keeping a measuring spoon with them until you are comfortable with a serving size. To make this all you do is:
Toast 1 whole wheat bagel thin
Add 2 tablespoons of almond butter (one per bagel)
Sprinkle with 1-2 tablespoons of flax seeds
Top with organic blueberries
Although this isn't Paleo Diet or Ketogenic Diet friendly, it is a good breakfast for someone who is trying to live a well balanced lifestyle. I love that this recipe is vegan and vegetarian. I go meatless at least once each week. Not only is it good for the environment, it is also good for your cholesterol.
