
I have never been a soup person, but this year my sister would not stop talking about Panera Bread’s broccoli and cheddar soup. One day I was out shopping with my mom and she suggested we go to Panera. We are both doing the Keto Diet and I wasn’t sure what I could eat there other than a salad when I remembered my sister’s suggestion! Since then, I have been really into making soups, especially as the temperature keeps dropping. If you want to save money and convenience, make your own soup!
Ingredients:
1 Yellow Onion
¼ Cup melted Kerry Gold Grass Fed Butter
¼ Cup Almond Flour (or another Keto Friendly flour)
2 Cups Heavy Whipping Cream
2 Cups Organic Chicken Stock
1 Bag of Frozen Vegetables
1-2 Cups Chopped Carrots (I like a lot of carrots in mine)
Nutmeg
1-2 Cups Sharp Cheddar Cheese (I like mine cheesy)
Instructions:
Chop your carrots into small strips. Publix carries bags of shredded carrots so that is what I used to save time
Chop your onion and sauté it in butter
In a separate pot, pour in your melted butter, almond flour, and heavy whipping cream. Stir together and simmer for 5 minutes
Add your chicken stock and simmer for another 20 minutes
Add carrots and frozen broccoli (you do not need to thaw it out) and cook on low to medium heat for 25 minutes. I stir the soup and break apart the broccoli using my mixing spoon when it starts to get tender
Remove from heat and stir in your cheese, salt, pepper, and nutmeg
That’s it!
