
I love this meal! This was one of my Friday staples during Lent this year. White rice has been controversial in the health community, and for many years I would only eat brown or wild rice. However, white rice is a great source of fiber and folate, and it is free from anti nutrients found in brown rice. The moral of the story is don’t be afraid of white rice. It can be incorporated into a healthy and balanced diet when consumed in moderation.
This recipe is so simple and inexpensive and I recommend to anyone who is trying to incorporate other forms of protein into their diet. It is also vegan and vegetarian
Instructions:
Cook white rice according to packaging
Preheat oven to 350 Degrees F
Drain one can of chickpeas to eliminate extra sodium
Mix BBQ Sauce and chickpeas in a small mixing bowl and lay evenly on a baking sheet
Cook for 40 minutes, flipping the chickpeas halfway through to roast evenly
When the chickpeas are finished, mix again with more bbq sauce
Mix the Chickpeas, rice, and 2 handfuls of spinach together and serve
This recipe serves 3-4 and can be stored for 5 days for maximum freshness
