
I love to eat eggs in the morning. They are very economical and you can cook them so quickly. Plus they are filled with protein which will keep you feeling full longer. This is one of my go-to breakfasts because it is so simple! All you need is a small sweet potato and cage-free organic eggs. Fry your egg in a pan on the stove top. I always place a lid from a miscellaneous pot on top of the egg to hold in the heat and cook it faster. While your egg is frying, wrap your sweet potato in paper towels and poke small holes in it using a fork. This prevents the sweet potato from bursting in the microwave. Microwave your sweet potato for 5 minutes on high. When it is finished, mash it up, place the fried egg on top and you are done! This method of cooking also cuts down on clean up time because fried eggs do not make a big mess in your pan.
