Greek Inspired Zucchini Noodles

I love vegetable noodles. I have tried all different types: zucchini, beet, squash. I don't own a spiralizer right now (I do want to purchase one), but you can buy zucchini noodles at many grocery stores including Publix in the produce section. This is an easy and healthy five minute meal I make after a workout, if I haven't meal prepped that week. To make it you need to buy:


1- spiraized zucchini noodles

2- Perdue Harvestland Organic Gluten Free Grilled Chicken Breast Strips (6oz)

3- Athenos Traditional Feta Cheese

4- Kalamata Olives


Heat the spiralized noodles in a skillet with 1 tablespoon of olive oil and the precooked grilled chicken for 5-7 minutes on medium-high heat. Some people complain that the zucchini noodles are wet or soggy if overcooked, so be mindful of how long they are on the stove. When the chicken is warm and the noodles have achieved the appropriate texture you can divide it into servings and mix in Kalamata olives and some feta cheese. I usually get 2-3 servings out of one container of Publix zucchini noodles. This is an easy and healthy meal for any person on the go!


To make this meal vegetarian: swap out chicken for white beans, artichoke hearts, or roasted chickpeas

To make this meal vegan: use the vegetarian swap with vegan friendly feta cheese you can purchase at stores like Trader Joe's!
