This hummus and tomato roll up is delicious. I also make this recipe using hummus and avocado. These roll ups are a great source of vitamins, protein, and healthy fats. I use spinach tortillas because I think the spinach compliments the other flavors, but you can use whatever you have. This is a meal I usually make when I need to go to the grocery store and only have my kitchen staples in stock. Although for other recipes I used flavored hummus, I found that Sabra Classic Hummus taste best.
To Make the Hummus and Tomato Roll Ups You will Need:
8 ct bag of spinach tortillas
10oz container of Sabra Classic Hummus
2-3 Tomatoes or 3-4 Avocados
Simply lay your tortilla on a cutting board or plate, measure out 2 tbsp of hummus per tortilla (place on the outer third of the tortilla)
Place your tomato or avocado slices vertically down the hummus paste
Tightly roll up and cut into thirds
I evenly distribute the tortilla thirds among Pyrex Containers (2-3 thirds is usually plenty per serving).
If you want to bake these:
Preheat Oven to 400f degrees
Bake 15 Minutes until crispy
Cut into thirds and distribute
