
This is an easy five minute meal. I usually make this if I need to go to the grocery store or am in a hurry to eat after I've worked out. I exercise 4-5 times a week and usually have to go straight after work. I almost always skip a workout one day midweek so I can meal prep if I didn't on Sunday. Even on the days I meal prep, I need to eat a fast dinner so this five minute meal is perfect. Sweet potatoes and black beans are a staple in my pantry. Sweet Potatoes are a great source of Vitamin A, C, and B6 in large part due to their orange color! Complex carbohydrates like sweet potatoes keep you feeling full longer and breakdown more slowly in your body which means your insulin levels won't rise as quickly as if you were eating a loaded white potato. Black beans are a good source of protien, and I always buy organic canned beans. Most people don't know this, but canned vegetables have even more nutrition than frozen vegetables and are a fraction of the price of fresh vegetables. This is because they are canned at their ripest (more nutrition), are preserved (making them less expensive), and as long as you rinse your canned food before cooking with it you remove all the preservatives and the additional sodium is gone!
Five Minute Loaded Baked Potato:
Use a fork to poke holes in your sweet potato and wrap it well with a paper towel. Microwave the sweet potato on high for 5 minutes. Cut the sweet potato at the middle and "shred" with your fork. Open, rinse, and drain a can of organic black beans (Greenwise is the brand I usually purchase). Mix 1/4 of the container and spinach together and stuff it inside your sweet potato. Voilà!
